Methods
To research and document the role of drink in the East and West through an international digital database, seminars, educational exchanges and a series of publications.

Scope
The major forms of drink to be investigated are:
Infusion drinks - where a plant is boiled (tea, coffee, cocoa)
Fermented drinks - where a plant is left to ferment, often with yeast added (ale, beers, wines)
Distilled drinks - where a plant is boiled and the essence is distilled from it (whisky, sake, baiju)
